Savory Bacon Pot Roast

Ingredients

  • 6 strips bacon
  • 11/2 pounds potatoes, cut into 2” pieces
  • 34 stalks celery, cut into 1” pieces
  • 34 medium carrots, peeled & cut into 12” pieces
  • 21/2 pound boneless chuck roast
  • 1 medium onion, diced
  • 1 packet McCormick’s Savory Pot Roast Seasoning
  • 2 tablespoons tomato paste
  • 11/3 cup water

Instructions

  1. Place cut potatoes, carrots, & celery in the bottom of the slow cooker.
  2. Cook bacon until brown and crispy.
  3. Remove bacon from pan and set aside to cool.
  4. Discard all but 3 tablespoons of bacon fat from the pan.
  5. Season one side of the roast with salt and pepper and sear, seasoned side down, in bacon fat until browned; another 8-10 minutes.
  6. While the roast cooks, crumble or roughly chop the bacon. Reserve about 1/3 for serving and scatter the rest on top of the vegetables in the slow cooker.
  7. Turn the roast and sear the second side until browned.
  8. Place roast on top of the vegetables.
  9. Return the pan to the heat, keeping 2-3 tablespoons of the fat in the pan,
  10. Add the diced onion and cook until softened, about five minutes.
  11. Stir tomato paste into the onions until coated.
  12. Add the Savory Pot Roast Seasoning to the pan and stir in 1-1/3 cup water.
  13. One throughly mixed together, pour over the roast in the slow cooker.
  14. Cover and cook on low for 6-8 hours.
  15. Serve with reserved bacon crumbled over the top.

Notes

When I make this, I set it to cook on low for 6 hours and then switch to Keep Warm, which is still bubbling hot, but not enough to overcook the roast.
Also, I’m not usually one for single-use materials (especially plastic), but these will save you from having to scrub and/or soak your slow cooker after dinner.
