Cucumber & Herb Gin Cooler

A hybrid between a Gin & Tonic and a Mojito, this is the perfect drink for when you just can’t deal with the humidity. Mix one up, sit on your porch, or balcony, or in your open window, and watch the world go by.

Ingredients

Scale
  • 1/4 lime
  • 2 teaspoons sugar
  • 1/4 cup fresh herbs; mint and thai basil here, but use your favorites!
  • 2 oz. gin [I prefer the clean, light taste of Plymouth with this]
  • 2 oz. cucumber juice
  • Club soda, tonic, or sparkling water

Instructions

  1. In your preferred drinking glass, muddle the lime and sugar until a syrup forms.
  2. Add the fresh herbs and muddle, lightly, until you can smell them.
  3. Pour in gin and cucumber juice.
  4. Top with whichever fizzy goodness you prefer: soda, tonic, or sparkling water.
  5. Drink.
  6. Watch the world go by.
